Paleo Green Bean Casserole

Our green bean casserole recipe is a healthy twist on a classic holiday dish. It uses coconut milk and almond flour instead of dairy and wheat flour, and is packed with flavorful herbs and spices. It’s a great side dish for any occasion, and is sure to be a hit with Paleo and non-Paleo eaters alike. We love this recipe all year long!

Paleo diet promotes eating foods that were around during the time of our ancient ancestors, before farming and modern food processing. It focuses on eating meat, fish, vegetables, fruits, nuts, and seeds, while avoiding processed foods, grains, beans, dairy, and refined sugar.

One of the main benefits of the Paleo diet is that it promotes whole, unprocessed foods, which are nutrient-dense and low in sugar and additives. This can help reduce inflammation, improve digestion, and support healthy weight management. Additionally, the diet is high in protein, which can help build and maintain muscle mass, and high in healthy fats, which can support brain function and hormone balance.

Whether you're following a paleo diet or simply seeking a healthier alternative, this green bean casserole will exceed your expectations. It's a celebration of real, unprocessed ingredients that allow you to savor the flavors of nature while indulging in a satisfying and wholesome culinary experience.

Paleo Green Bean Casserole

Ingredients:

1 1/2 lb. frozen, organic, green beans, thawed

1 1/2 cups  Coconut Milk

3 tablespoons Organic Butter

3/4 cups of Almond Flour

8 oz. or 1/2 lb. Mushrooms, chopped

1 Onion, diced

1 teaspoon Garlic Powder

1 teaspoon turmeric

Fresh ground pepper, or to taste

Sea Salt, to taste, start at 1/2 teaspoons and adjust to your liking

3 Cloves Garlic, minced

1 tablespoon Coconut Oil

1 tablespoon Organic Coconut Flour

Method:

Place green beans in a colander, pour hot water over them to quick thaw them out.  Drain, and spread into a prepared 9×13 pan.

In sauté pan, cook the onions, mushrooms and garlic until soft in the ghee or grass fed butter.   Add to the green beans, mix and spread evenly.
In a medium bowl, mix together the Coconut milk, garlic powder, turmeric, and coconut flour.    Pour the mixture over green beans, which should cover them about halfway.  Add salt and pepper over whole dish.
Bake on 350 for 30 minutes.  Add almond meal to top and place under the boiler for 5-10 minutes.  Allow the casserole to cool for 5-10 minutes prior to serving.
